Spicy Beef Noodle Soup

2016-10-15: Made this but omitted the spicy bean paste to cater to the tastes of a 4 year old who doesn’t like spicy food, and we used sherry instead of the wine. We got it to the point of letting it sit for an hour, and then packaged it up. When the time comes, we’ll make the noodles fresh (and probably add in some mushrooms and cabbage) when reheating the main bulk of the soup.

It makes A LOT of soup.

Romige Spinazietaart

  • Pie crust
  • 900g spinach (frozen)
  • 40 g butter
  • 1 onion
  • 1 clove garlic
  • 3 eggs
  • 200ml cream
  • 250g ricotta

Defrost the dough and spinach (if using frozen). Preheat the oven to 190C. Grease the pie tin and line with dough. Chop the onion and garlic fine and fry in butter three minutes, and let cool.

Put the eggs in a large bowl, and mix together with cream, ricotta, and spinach. Salt and pepper to taste. Pour into tart form and bake in the middle of the oven for 35 minutes.

2016-08-21: We had a surfeit of fresh spinach so I opted for this recipe. But I didn’t really follow it. We had no white onions, so we omitted that. We had two containers of leftover peas, so we added them. The store had no ricotta (and the only cottage cheese was pineapple flavored), so we used mascarpone. We added three strips of bacon, because bacon.

Carrot & Lentil Soup with Pancetta

  • 1 onion
  • 2 carrots
  • 2 stalks celery
  • 1 medium potato
  • 1 garlic clove
  • 3 T chopped coriander
  • 1/2 C red split lentils
  • 1/4 t chilli flakes
  • bouillon
  • 1 tin chopped tomatoes
  • 1 pack pancetta

Peal and finely chop the onions and carrots. Finely chop the celery and garlic. Peal and chop the potato into 2cm chunks. Rinse the lentils thoroughly.

Cook the chilli, onion, carrot, celery, and garlic in 1 T olive oil for about 6 min. Add the potato and cook a further 5 min. Add 600 ml water and bring to a simmer. Add bouillon, tomatoes, and lentils. Simmer for 20 min. or until the lentils are soft.

Meanwhile, cook the pancetta for 5 min. until crispy around the edges. Drain and set aside.

Serve soup garnished with coriander and pancetta.

Pasta Peperonata

  • 4 T olive oil
  • 1 clove garlic, finely chopped
  • 1 large onion, chopped
  • 1 small eggplant, in pieces
  • 1 yellow pepper, in strips
  • 1 red pepper, in strips
  • 6 small tomatoes, in quarters
  • 2 T balsamic vinegar
  • Salt, pepper, chili to taste
  • 500 g spaghetti
  • fresh basil
  • fresh pecorino

Heat the oil and cook the garlic and onion for 2 minutes. Add the eggplant, peppers, tomatoes, vinegar, and 2 T water. Cook for 10 minutes.

Cook the pasta according to the directions on the package.

Season the vegetables and cook another 10 min. or until tender. Mix with spaghetti and serve with fresh basil and cheese.

2014-05-20: Quick to put together, nice and spicy. We used halved cherry tomatoes.

Ovenrisotto

  • 50 g butter
  • 1 onion, sliced
  • 100 g lardons
  • 300 g risotto
  • 750 ml chicken broth
  • 450 g frozen peas
  • 50 g Grana Padano

Preheat the oven to 180 C. Melt the butter in a frying pan and cook the onion for three minutes. Add the lardons and cook a further 1 minute. Add the risotto and cook for three minutes. Season to taste with salt and pepper.

Put the risotto in an ovensafe dish and pour the bouillon over. Bake in the oven for 35 minutes (covered).

Cook the peas. Mix together with the risotto and the cheese, and season to taste.

Tasty with Catalan sausages.

2014-04-21: Made this tonight. I was suspicious of the cooking method, and checked it after 15, 25, and 30 minutes. Yet, it worked! I think I will use the method again. I wasn’t enamored with the peas in the risotto. Next time, I’d serve them as a side dish.
