Potatoes Provencal

  • 1/3 C olive oil
  • 1/2 clove garlic, minced
  • 1 t grated lemon rind
  • 1 T minced parsley
  • 1 T minced chives
  • 1/4 t nutmeg
  • 6 potatoes, peeled and sliced very thinly
  • salt and freshly ground pepper
  • juice of 1/2 lemon

Heat the oil and add the next 6 ingredients. Simmer gently, covered, for 20-25 minutes or until tender, turning potatoes occasionally. Season to taste and squeeze lemon juice over potatoes.
