Watermeloen met Feta en Munt

  • Watermelon
  • Feta
  • Mint
  • 3 T extra virgin olive oil

Cut the watermelon into cubes or balls and remove rind and seeds. Cut the feta into blocks, if it isn’t already. Mix together the melon and feta. Cut the mint into slices, and sprinkle over the mixture. Drizzle with olive oil and freshly ground pepper.

Almond Fritters

  • 2 eggs
  • 1/2 C sugar
  • 1 1/4 C very fine, dry, white bread crumbs
  • 1 1/4 C ground almonds
  • 1 t baking powder
  • 2 1/2 C milk or white wine
  • powdered sugar for dusting

Beat together eggs and sugar until light and creamy. Mix together breadcrumbs, ground almonds, and baking powder. Beat milk or wine into sugar/butter mixture, and then add the dry ingredients gradually until you have a rich, creamy batter. Leave to rest for 2 hours and then deep-fry in hot fat, like fritters, a spoonful at a time. Sprinkle with powdered sugar before serving.
